Well, when you buy "cured bacon" or just regular Bacon, it's cured using sodium nitrite. 'Uncured bacon' is bacon cured with anything other than commercially produced chemical sodium nitrite. In the eyes of the government and food inspection agencies if it's not cured using sodium nitrite then it's not cured.

So all bacon is cured in the eyes of Wikipedia but not in the eyes of whoever inspects your food :P

The government does this basically to ensure the food ins't going to kill you when you eat, because well eating raw pigs is a stupid idea which is why Muslims and Jews scribed it into their religion not to eat it to keep their tribes from going the wayside (presumably).
